Ingredients
2 Tbs olive oil
1/2 small onion, diced
2 cloves garlic
1 Tbs tomato paste
2 cups broth
1 1/2 cups marinara sauce
1 cup packaged gnocchi
2 cups turkey, shredded
grated parmesan, for garnish
sliced basil leaves, for garnish
Directions
  1. Heat oil in stockpot; add onions. Lower heat. Let onions soften and caramelize.
  2. Add garlic; sauté for 1 minute.
  3. Add tomato paste. Sauté for 2 minutes to caramelize.
  4. Slowly, stir in broth and then marinara. Bring to a boil.
  5. Add gnocchi and turkey; reduce to a simmer. Cook until gnocchi are ready.
  6. Ladle into soup bowls. Garnish with parmesan and basil.
